done in the case of a steak by scaring the outside In broiling a steak place close to the fire at first turn ing frequently until the outside is seared brown Then so place it that it can cook slowly until done Rev member that rare meat does not mean raw meat Meat cooked rare has a bright pink appearance If not cooked it will have a bluish purple color When beef is rare it is cooked in its own sap Beef should not be fried in grease v For convenience it may be cooked upon a hot frying pan or skillet In this case use no grease and turn the steak over two or three times to sear v the outside and retain the sap Never cook beef in boiling grease v In roasting beef have the oven very hot before putting it in This will p sear the outside and seal in the sap 1 The roast should be turned a time or at the beginning and then lower t c temperature of the oven slightly and let it roast until done to the Tfy Point desired Pot roast should be parboiled and v finished with very little water and c kept covered A good plan is to first boil tender then take off the V1V water and finish by roasting in oven i Do not have the bone cut out of y a roast better and is sweeter with the bone left in The bone also helps to hold the sap in the meat Disabuse your mind of the idea r that it is not fashionable to place fr the cheaper cuts of beef on your table The meat bills of the eat salaried chefs of the
