until it is done Spread each of the cakes with quince jelly and cover over with a thick layer of whipped cream stiffened by adding a small tablespoonful of gelatine The gelatine is melted by soaking it in a tablespoonful of cold water for two hours when it should be melted in a tablespoonful of boiling water in which tablespoonful of hot melted quince jelly has been stirred Strain the gela- ¬ tine mixture into the whipped cream and whip it in When this cream is spread on one cake set it aside and spread on the other cake a meringue made of the two whites of eggs two heaping tablesponnfuls of powdered sugar and a tablespoonful of lemon juice or quince jelly if it can be ob tained Dredge powdered sugar thick ¬ ly over meringue and bake it in a very slow oven for about ten minutes when it
